Fennel variety Doux de Florence (Foeniculum vulgare var. dulce)
The bulb of the Florence fennel is the most commonly consumed part of the plant, and it has a sweet, anise-like flavor. The bulb can be eaten raw or cooked and is often used in salads, stews, and soups. The feathery fronds of the fennel plant are also edible and can be used as a garnish or chopped up and added to dishes.
If you’re growing fennel for its bulb, you can start the seeds in the summer to harvest in the autumn. Alternatively, you can start the seeds in early spring to harvest them in early summer. Fennel has a tendency to flower during the summer months.
Sowing and harvesting
- Start indoors in February and March
- Seeds germinate within a week if the soil temperature is (15-20°C)
- Plant out under cover (fleece) around late March or April
- Sow in late June or July for an autumn harvest
Growing advice
- Fennel grows best in full sun
- Regular watering prevents early bolting
