Bulb fennel or Florence fennel variety Fino (Foeniculum vulgare)
Florence fennel or bulb fennel is a popular ingredient in Italian cuisine. It has a sweet, aniseed flavor and a crisp, crunchy texture, making it a versatile ingredient that can be used in both raw and cooked dishes.
Our personal favorite is to cook it with risotto. Plants tend to bolt when grown in the summer, so it’s best to start them either early in the season or in the middle of summer for an autumn harvest.
Did you know you can also harvest them as a baby vegetable? This is also a great option if you sowed a bit late and are worried that your fennel will bolt.
Sowing and harvesting
- Start indoors in February and March
- Seeds germinate within a week if the soil temperature is (15-20°C)
- Plant out under cover (fleece) around late March or April
- Sow in late June or July for an autumn harvest
Growing advice
- Plants grow best in full sun
- Harvest in early summer and water frequently to prevent bolting
- Fino is relatively bolt resistant, giving you some extra time to harvest
