If there’s one vegetable that makes regular appearances in our front yard garden, it’s the humble red beet. This versatile root vegetable has earned its spot as a favorite in our kitchen, thanks to its deep, earthy flavor and ease of growing. And now that they’re about the size of golf balls, it’s time to start harvesting.

If you’ve never tried roasted beets, you’re in for a treat! The natural sweetness of the beets, combined with honey and thyme, makes for a delicious side dish or a light meal. Here’s our go-to recipe for honey & thyme roasted beets straight from the garden.

Ingredients (2 person)

  • 4 medium-sized red beets
  • 2 tablespoons of honey
  • A few sprigs of fresh thyme (or 1 teaspoon dried thyme)
  • Aluminum foil
  • Salt and pepper to taste (optional)

Prep Time

  • Preparation: 10 minutes
  • Cooking: 60 minutes
  • Total Time: 1 hour 10 minutes

Instructions

  1. Preheat the oven
    Set your oven to 180°C (350°F).

  2. Prepare the beets
    Peel the red beets and rinse them under cold water to remove any remaining dirt.

  3. Wrap the beets
    Lay out a sheet of aluminum foil for each beet. Place one beet on each sheet of foil.

  4. Add honey and thyme
    Drizzle a generous amount of honey (about 1/2 tablespoon per beet) on top of each beet. Add a few sprigs of thyme for flavor. You can also sprinkle a pinch of salt and pepper if you like.

  5. Create a foil package
    Fold the foil over the beet and twist the top together, creating a little "present" to keep the juices and flavor locked in while roasting. (you might need to add an extra layer)

  6. Roast the beets
    Place the foil-wrapped beets on a baking sheet and roast them in the preheated oven for 60 minutes.

  7. Cool and unwrap
    After 60 minutes, take the beets out of the oven. Let them cool for a minute or two before carefully unwrapping the foil. The beets should be tender and fragrant with honey and thyme.

  8. Enjoy!
    Serve them warm as a side dish or slice them up to add to salads, sandwiches, or bowls
